Are unripe winter squash edible?

-My hubby decided to "help me" while I was out of town by picking my Italian winter squash a month before they should be ripe (did he have any idea what they even were? NO!). I am trying not to be livid. I'm wondering if they are edible unripe or must I consign them to the compost pile? Any ideas for ways to salvage them?
